The fruit is pressed gently as soon as it is received to retain a fresh citrus profile. Cold settled and clarified overnight with a neutral yeast for fermentation, this process allows the fruit to express itself without outside influence.

Lovely ripe limes/grapefruit nose and some talc. Generous and balanced palate with a beautiful weight and length, not over-ripe and very expressive. Well layered flavours, sustained length with a subtle, soft acid finish.

Can be cellared for 10+ years to be aged.

Best paired with seafood such as oyster or prawns.
